With more than 5 years of experience tasting coffee, CAFÉ CHACON, has its own laboratory in which a lot of effort and dedication has been put into its development; we have qualified personnel who have been trained and graduated as 5-star tasters, from the School of Tasters of the Honduran Coffee Institute (IHCAFE), as well as the high quality and technology media and instruments that allow us to reach our goal in terms of quality of coffee. Our laboratory has allowed us to make ourselves known not only at the national level, but also to transcend borders since we have participated in competitions of an international nature, in which we have positioned more than 10 samples in the finals of said event. Likewise, it allows us to fairly qualify the attributes and qualities of the coffee of each of our producers.

With a presence in more than 10 municipalities of our department, Ocotepeque, as well as in the southern area of the department of Lempira, our coffee beans come from an average height of 1400 meters, with different varieties (pacas, red catuai, yellow catuai catimores and others more). Classifying our coffee as follows.

It all starts with the collection of the ripe fruits of our coffee in the plantations of the producers which follow a special selection process for it. Using the best machines for pulping and drying, the processes are carried out in a slow and safe way to take care of the quality of the grain and not lose the essential thing that is sought at the time of production, which are the attributes of this.

Process that we carry out using concrete plates which take advantage of the natural temperature that the sun produces daily, this is a process that can last between 4 to 5 days depending on the weather at the time of doing this task or work, with this form of drying coffee we contribute to the care of the environment since we stop generating carbon dioxide which is produced with mechanical drying, also that helps us improve our economy and that of producers; as well as the attributes of coffee are better developed.

Known as an African bed, this coffee extraction system is very special, since it seeks to develop the attributes of the grain to the maximum, with a drying process of more than 6 days, the African bed system is very effective for special coffees (micro lots), with which we manage to reach the highest notes of coffee at the time of its tasting.

We promote among our producers the totally free coffee transport service, either for producers who are in very distant areas from the main collection center, as well as for small producers who do not have their own means of transport, thus avoiding producers incurring higher production costs.
